Recipe: Asparagus Fries

How about a yummy garden fresh substitute for french fries? Asparagus is baked to crisp perfection in under 20 minutes with only 6 ingredients!

Asparagus is one of the best veggies to use for a french fry substitute because they are already shaped to perfection which requires little prep work. They are a superfood loaded with antioxidants to help detoxify the liver!

INGREDIENTS

  • 1 pound asparagus spears, ends cut off

  • 1 large pasture-raised egg, beaten

  • 1/3 cup almond meal

  • 1/4 cup nutritional yeast

  • 1/2 teaspoon sea salt

DIRECTIONS
  • Preheat the oven to 425ºF.

  • Place the asparagus spears in a large mixing bowl. Cut the tough ends of the asparagus.

  • Pour the beaten egg over the asparagus and use your hands to coat.

  • You can add herbs like dried basil, dill, or garlic at this time.

  • Combine the almond meal, nutritional yeast, and sea salt in a shallow dish or plate.

  • Shake the excess egg off the asparagus and toss in the almond meal mixture, using your hands to coat the spears.

  • Evenly spread the asparagus onto the baking sheet.

  • Bake for 10-12 minutes, until light golden brown. Serve hot.

BONUS - Paleo Ranch Dressing
INGREDIENTS
  • 1 cup Paleo mayonnaise

  • ½ cup full-fat coconut milk

  • 1 t garlic powder

  • 1 t dried dill

DIRECTIONS
  • Place all the ingredients in a bowl and mix until smooth and creamy.

  • Chill in the fridge for at least 30 minutes before serving.
