Healthy Eating - Apple Pancakes

Hope you are all enjoying and staying on track with your healthy living. This past weekend I did a little recipe testing. My goal is to try to make at least 2 new meals each week to experiment. I purchased Wolfgang Puck's Bistro Elite Collect - 27 piece set and I LOVE IT! I want to cook even more than I already do. I'm all about cooking from scratch. I do most of my grocery shopping on the outside of the isles for everything healthy and fresh! :) This past weekend I tried apple pancakes for breakfast. Check out the recipe below.

INGREDIENTS
  • 4 apples, sliced (peeled if desired)

  • 1 batch favorite pancake batter - I used Arrowhead Mills Whole Wheat Buttermilk Pancake & Waffle Mix

  • 1 tsp. cinnamon

  • Cooking spray or butter, for pan

  • Maple syrup

DIRECTIONS
  1. Mix together cinnamon and pancake batter

  2. Using a melon baller or small cookie cutter, scoop out core in apple slices.

  3. Toss apple slices in pancake batter until totally coated.

  4. Meanwhile, in a large nonstick skillet over medium heat, heat cooking spray or butter. Add apples and cook undisturbed until bubbles form on pancake batter, 2 minutes. Flip and cook 2 minutes more.

  5. Serve with maple syrup

I served my apple pancakes with sides of egg whites with Swiss cheese, turkey bacon, cantaloupe and blueberries!
